Elaboration: the grape harvests of Monastrell have place at the end of September, at the optimal moment of maturation.
The grape harvests of Petit Verdot take place second week of October (this vine arrives at maturation late in this region).
Cold pre-fermentation during 3 days in a temperature of 7 °C for 2 varieties.
Breeding: 3 months it new futs of French oak.
Picture: purplish purple red color of average intensity.
Olfactive: intense qualify of red berries walls, milky, balsamic note, grilled, mineral bread.
Gustative: fruity, wooded aromatic, cocoa and spiced. Light, fresh(cool) tannins in mouth, fruity and pleasant. Persistent.
Accompany white meats, meats red, delicatessen, cheeses, fishes, pates.
Be of use to 16 °C.
