Catalunya groups includes 7 AO and 1 AOC on 70 000 hectares of vineyards. Each of these AO is situated on a zone with Mediterranean climate but with different characteristics according to the relief.
We find the AO Alella, Conca de Barbera, Costers del Segre, Emporda, Penedès, Tarragona, Terra Alta and the AOC Priorat.
The AO Catalunya is atypical because it is the first one to have broken loose from the Spanish classification, it uses the structure of classification vertical of the French model.
The AO Cava(Spanish sparkling white wine) arises from a process of classification of (sparkling) wines Espumosos which in summer introduced in 1972 and closed in 1986.
She groups includes 7 autonomous communities distributed on 136 villages, among which 132 in Catalonia and 4 placed along Ebre (Aragon, Navarra, Rioja and Vasca). On 32 000 hectares of vineyards, it is the AO Penedès which produces 90 % of the total production of the Cava.
Although Catalunya possesses a Mediterranean climate, vineyards situated along Ebre have the peculiarity to have a continental climate with strong Mediterranean influence.
The formula traditional of the elaboration of Cava includes the vines of Macabéo, Xarel.lo and Parrellada, but today every wine grower adapts vines according to his soil.
Other dominant vines are Tempranillo, Garnacha, Monastrell and Carinea.
